Krispy treats

I'm sure "Rice Krispie Treat" is copyrighted, so call these "Krispy Treats" and make them with whatever cereal you want, as long as it's GFCF. We like Koala Krisp by EnviroKids.

About 50 large marshmallows
1/4 cup GFCF stick margaine (not from a tub, or it'll be too watery)
8 cups GFCF cereal

Spritz a large glass pan with non-stick spray. Set aside.

In a large pot with high sides, melt the margarine over medium heat. Add marshmallows and stir until they are melted -- this will take several minutes. Add cereal and turn to coat it well with the marshmallow mixture. Transfer it quickly (it'll harden as it cools) to the greased pan, spritz your hands with non-stick spray, and press the warm cereal mixture into an even mass. Allow to cool completely, then cut into bars.

Makes about 24 bars (though, if my kids had it their way, this recipe would make one, maybe two, gigantic slabs).
